A Healthier Apple Crisp

This is so delicious and light! Serve warm and can be topped with whipped cream or ice cream for kids/guests, if desired. But it tastes wonderful plain as well!

INGREDIENTS

5 Honeycrisp apples

juice of 1 lemon

2 t cinnamon

1 1/4 c rolled oats

3/4 c chopped pecans

1 t nutmeg

1 t ginger

dash salt

3 T coconut oil, melted

3 T pure maple syrup


METHOD

Preheat oven to 350 degrees. Lightly grease 9x9 inch baking dish with coconut oil. Core and slice the apples, do not peel. Sprinkle apples slices with lemon juice and 1 tsp of the cinnamon, and spread in the bottom of the prepared dish. Combine all of the remaining ingredients and sprinkle the oat/pecan mixture over the apples. Bake 20 minutes until lightly brown. Serve warm and enjoy!
