I finally perfected this recipe!! If you're a fan of the cranberry orange relish recipe found on the bag of fresh cranberries, you will love this! The original recipe calls for just cranberries, oranges, and sugar combined in a food processor, and it is one of my favorites ways to eat cranberries, so of course I wanted to find a way to make it without sugar. Well, here it is!! Dried figs are the sweetener and it is just so deliciously sweet and tart!! I hope you love this as much as I do!
INGREDIENTS
1 bag fresh cranberries
1 whole orange, cut into 8 pieces (do not peel)
zest of another orange
10 dried figs, approximately 1 cup chopped (more or less to taste)
METHOD
Combine all ingredients in a food processor. Pulse/process until fine consistency, scraping down bowl as needed. Chill and serve. Enjoy!
Variations:
After processing, mix in a seeded and finely diced jalapeno for a sweet and heat combo that is fabulous!
After processing, mix with a diced apple and chopped walnuts for a cran-orange-apple salad.
