Almond Energy Bites


These are so yummy! Great with your coffee or for a quick bite after exercising or a sweet treat after a meal. Your kids will love these! Try it with other fruit/nut/flavor combos too!


INGREDIENTS

1 c raw almonds ½ c macadamia nuts 1 c dried apricots 1 t almond extract Approx 2 T water ½ c unsweetened coconut flakes (optional)


METHOD Place almonds and macadamias in a food processor, process for 30 seconds, scrape down, process another 15-30 seconds until finely chopped. Add the apricots, coconut, almond extract, and process another 10-15 seconds, then scrape down sides and process again. If it's not starting to clump, add the water, 1 tablespoon at a time as needed. Should form a somewhat sticky dough with a coarse texture from the nuts. Roll into 18 balls, place on parchment paper, and refrigerate for several hours. Stores well in the refrigerator for up to 2 weeks. Enjoy!
